A fundamental role is played by the pastry kitchen, where Francesco Federici produces extraordinary desserts, among them the indispensable soufflé. In the dining room, an impeccable crew is led by the experienced Alessandro Tomberli, a historic figure at the Enoteca. And the wine cellar?
